No Bake Peanut Butter Chocolate Cookies

Ingredients

  • ¾ cup creamy natural peanut butter

  • ½ cup low-fat milk

  • ⅓ cup light brown sugar

  • ¼ cup unsalted butter

  • 4 teaspoons unsweetened cocoa powder

  • ⅛ teaspoon salt

  • 1 ¾ cups rolled oats

  • 1 teaspoon vanilla extract

Directions

  1. Combine peanut butter, milk, brown sugar, butter, cocoa and salt in a medium saucepan. Cook over medium heat, stirring, until the butter and sugar have melted. Remove from heat and stir in oats and vanilla.

  2. Drop the dough by generous tablespoonfuls onto a parchment-lined baking sheet. Press into 2-inch circles. Chill until firm, at least 30 minutes. Keep refrigerated.
