Baked Pancake with Peaches

Ingredients

  • 1 tablespoon butter

  • 2 large peaches, peeled and cut into 1/4-inch slices

  • 1 tablespoon brown sugar

  • 1 teaspoon ground cinnamon

  • 3 large eggs

  • ½ cup milk

  • ½ cup all-purpose flour

  • 1 drop vanilla extract

  • 1 pinch salt

  • 1 pinch ground nutmeg

Directions

  1. Preheat the oven to 425 degrees F (220 degrees C). Place butter into a cast iron skillet and place into the oven until melted.

  2. Toss peaches gently with brown sugar and cinnamon in a large bowl until evenly coated. Set aside.

  3. Beat eggs, milk, flour, vanilla, salt, and nutmeg together in a medium bowl until well combined but slightly lumpy. Pour batter into melted butter in the hot skillet and arrange sugared peaches over the top.

  4. Bake in the preheated oven until set in the center, about 20 minutes.
