Banana Cranberry Bread

Ingredients

  • 2 ½ cups white sugar

  • 1 cup shortening

  • 3 large eggs

  • 3 mashed bananas

  • 1 cup cranberry sauce

  • ½ cup milk

  • 1 teaspoon vanilla extract

  • 4 cups all-purpose flour

  • 1 ½ teaspoons baking soda

  • 1 ½ teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ cup chopped walnuts

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two 9x5-inch loaf pans.

  2. Beat sugar and shortening together in a large bowl until light and fluffy. Beat in eggs, one at a time, then beat in bananas, cranberry sauce, milk, and vanilla.

  3. Whisk flour, baking soda, baking powder, cinnamon, and nutmeg together in a bowl; gradually stir into banana mixture. Fold in walnuts. Pour into the prepared loaf pans.

  4. Bake in the preheated oven until a toothpick inserted into centers comes out clean, 50 to 60 minutes. Cool in pans for 10 minutes, then turn out onto a wire rack, and cool completely.
