California Roll Cucumber Salad

Ingredients

  • 1 English cucumber, thinly sliced

  • 5 imitation crab sticks, diced

  • 1/2 avocado, diced

  • 2 sheets seaweed, torn into small pieces

  • 2 tablespoons rice vinegar

  • 1 tablespoon soy sauce

  • 2 tablespoons finely chopped pickled ginger

  • 1 teaspoon sesame seeds

Directions

  1. In a pint canning jar with a lid, add sliced cucumber, crab, avocado, seaweed, rice vinegar, soy sauce, pickled ginger, and sesame seeds. Cover tightly and shake until all ingredients are combined.
