Ingredients
- 3 pitted Medjool dates, chopped
- 1¾ cups unsweetened soy milk
- 1½ cups old-fashioned rolled oats
- 1 cup whole-milk plain strained (Greek-style) yogurt
- ¼ cup smooth natural peanut butter
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 2½ ounces bittersweet chocolate (60% cacao), chopped
Directions
- Combine chopped dates, 1¾ cups soy milk, 1½ cups oats, 1 cup yogurt, ¼ cup peanut butter, 2 teaspoons vanilla and ¼ teaspoon salt in a blender; process until the oats are smooth and the dates are broken down, 1 to 2 minutes. Transfer to a medium bowl; stir in chopped chocolate.
- Divide the mixture among 4 (8- to 10-ounce) jars; cover and refrigerate for at least 8 hours or up to 4 days.
