Low-Fat Banana Bread

Ingredients

  • 1 ½ cups all-purpose flour

  • 1 cup white sugar

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 large egg, beaten

  • ½ cup light mayonnaise

  • 3 ripe bananas, mashed

  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.

  2. Whisk flour, sugar, baking soda, and salt together in a medium bowl. Stir egg, mayonnaise, bananas, and vanilla extract together in a large bowl until well combined. Stir flour mixture into banana mixture until no dry lumps remain. Pour batter into the prepared loaf pan.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
