Super Easy Salmon Cakes

Ingredients

  • 2 cups crushed saltine crackers, divided

  • 1 (7 ounce) can salmon, drained and flaked

  • 1 egg, beaten

  • 2 green onions, finely chopped

  • 1 tablespoon olive oil

  • lemon pepper to taste

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).

  2. Combine 2/3 cup cracker crumbs, salmon, egg, green onions, and olive oil together in a large bowl. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet.

  3. Bake in the preheated oven, turning once, until golden brown on both sides, about 10 minutes.
