2 slices crusty whole-grain bread, toasted

1 small heirloom tomato, sliced

1 teaspoon extra-virgin olive oil

Pinch of flaky sea salt

Pinch of freshly ground black pepper

Fresh basil for garnish (optional)
Directions
- Spread 2 ounces goat cheese evenly on 2 toast slices. Top each with half the tomato slices; drizzle with 1 teaspoon oil and season with a pinch each salt and pepper. Garnish with basil, if desired.
